RECIPE: Champagne chicken
CHAMPAGNE chicken is a delicious recipe that can be whipped up in no time at all.
CHAMPAGNE CHICKEN (Serves 2)
- 2 skinless, boneless chicken breast fillets
- 2 tbls plain flour for dusting
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1-2 tablespoon olive oil
- 1 ½ cup fresh sliced mushrooms
- 1 cup cream
- ½ cup sparkling wine
Lightly dust chicken breasts with flour and a little salt and pepper.
In a large skillet, lightly brown chicken breasts to a nice golden brown in olive oil. Once browned on both sides, add mushrooms and champagne. Cook over medium heat, champagne should boil a little, for approximately 1/4 hour. When chicken is tender, transfer chicken to a platter.
Pour cream into pan. Simmer about 5 minutes, until slightly thickened. Pour sauce over chicken breasts. Serve with rice and salad.
